Spring is a wonderful season, partially because the weather is improving but also due to the bounties it brings. Strawberries and rhubarb are both in season during spring, so they’re at their most delicious; make sure you take advantage and enjoy them in this delightful cobbler, recipe courtesy of Great Harvest in Nashua.
Ingredients (serves 12):
¾ cup all-purpose flour
1 ½ cups sugar
6 tablespoons butter (chilled and cut into cubes)
½ cup rolled oats (not quick or instant oats)
½ cup nuts (chopped)
1 teaspoon vanilla extract
1 lb strawberries (halved)
12 oz rhubarb (cut into ½ inch pieces)
Vanilla ice cream
Combine the flour with ⅔ cup of sugar and a hefty pinch of salt in a large bowl. Whisk these together then add the butter cubes. Rub the cubes into the flour with your fingertips until the mix resembles crumbs but also contains some larger clumps. Mix in the oats and nuts, then cover the mix and chill it.
Preheat your oven to 375 degrees Fahrenheit and prepare a suitably-sized baking dish. Mix the berries and rhubarb together with the remaining sugar and vanilla extract and then transfer the sugared fruit into the baking dish. Sprinkle the cobbler topping over the fruit, then transfer the dish to the oven and bake for 45 minutes (or until the topping turns golden brown and fruit begins to bubble through). Let it cool for around 15 minutes and serve warm with ice cream.
