Here at Great Harvest in Nashua we pride ourselves in the fresh bread and treats we make daily. We also love it when our customers are able to try something new on their own. With Thanksgiving just days away, we thought we’d share one of our favorite sides for the turkey. Even if the holiday has passed, this delicious treat will be well received any time of year. It does however, employ some vegetables that are best in the fall and winter months, as they are in season now. As sweet potatoes are already a popular treat during this time of year, we thought we’d provide a bit of a different take on the traditional.

For this simple recipe, you’ll need the following:

For the salad-

1 ½ pound of peeled sweet potatoes
4 peeled red beets
4 peeled Bosc pears
Olive Oil
2 tablespoons of chopped, fresh sage
2 tablespoons of chopped, fresh tarragon
Salt and pepper

For the vinaigrette-

¼ cup of sherry vinegar
1 tablespoon of minced shallots
½ teaspoon of dijon mustard
¼ cup of olive oilsalt and pepper to taste

After you’ve gathered the ingredients, here is what you’ll need to do:

For the salad-

Start by preheating the oven to 375F
Line two trays with foil
Dice the sweet potatoes, beets, and pairs into similar sized small cubes
Spread the sweet potatoes and pears over one tray, and the beets on another
Drizzle olive oil, sage, and tarragon on each tray
Toss to coat and add salt and pepper
Roast the vegetables until they’re soft

For the vinaigrette-

Combine shallots, vinegar, and mustard-whisk
Add olive oil
Season with salt and pepper
After removing softened vegetables from the oven, drizzle the vinaigrette over them
