Great Harvest Bread
Real Food. Real People.

You may or may not be aware that there is a new craze out there, making delicious dishes for one, in a mug. You can find recipes for anything from brownies to coffee cup mac-n-cheese. Experimenting with these “in a mug” recipes can be quite fun and sometimes rather successful. We’ve already shown you how to make croutons, using our bread, and now we would like to share three easy  and yummy “in a mug” recipes.

Remember that any mug will do, but that those with a design or with any lead paint, may get hot more quickly on the outside, not heating the ingredients as thoroughly. I know we love fancy mugs, but something simple will cook the ingredients better!

Coffee Cup Quiche

You’ll need:
1 egg, 1 ½ tablespoons milk, salt, black pepper, ¼ of a bagel, french bread, or other type of bread (here it is really about preference), 2 teaspoons of cream cheese, ½ slice prosciutto, ham, or turkey, fresh thyme or chives, dijon mustard

We Recommend our Farmhouse White, English Muffin, or even our Vermont Cheddar Garlic bread for an added kick!

*Beat the egg and milk, adding salt and pepper, in the mug
*Tear bread into small (dime size) pieces and stir in with cream cheese
*Cut preferred meat into small pieces and add*Sprinkle thyme
*Microwave for about 1 minute and 10 seconds
*Garnish with mustard, thyme, or chives

In A Mug French Toast

You’ll need:
2 pieces of your favorite bread (white, wheat, croissant), 1 egg, 2 tablespoons of milk, cinnamon, Maple syrup, butter, vanilla extract (this is optional, but very recommended)

We Recommend using our Signature Honey Whole Wheat or Cinnamon Chip Bread

*Cube bread
*Butter the inside of your mug
*Pack 1 ½ slices of bread into the mug (remembering room for liquid)
*Separately, crack an egg and mix with 3 tablespoons of milk
*Add cinnamon, and for a really sweet combination, add vanilla extract
*Mix and add to the mug of bread
*Pat down and give a few minutes for the mixture to soak
*Microwave for  1 minute and 20 seconds or so
*Add prefered amount of syrup

Bread Pudding

You’ll need:
Bread *stale bread is perfect, 1 egg, 1-3 tablespoons of sugar (it’s all about the amount of sweetness you want), 2 tablespoons of yogurt or milk (Greek yogurt, coconut milk, or soy are  fine options), 1-2 tablespoons of butter/margarine, 2 tablespoons applesauce (optional) 1 tsp vanilla extract (optional), dash of cinnamon

We Recommend trying this with Great Harvest’s Signature Honey Whole Wheat or High Five bread

*Tear bread into pieces
*Pack in mug*In a separate container, mix all other ingredients, it is ok to melt the butter
*After whisking, pour onto bread, making sure the mixture reaches the bottom of the mug
*Microwave for about 2 minutes
*Let it cool (just a little)
